In my family the chicken breast is the least favorite to eat and normally gets thrown out. Fear not, I have a simple, easy and quick recipe for left over rotisserie chicken breast. It’s my chicken larb recipe and the best part is there is no cooking time. It takes as little as 15 minutes to have this at your dinner table.

Ingredients
- Rotisserie chicken breast (no skin)
- 1½ - 2 cups mint leaves
- 1 cup cilantro
- ½ cup green onions
- 1 small shallot
- 1 lime/lemon
- 1-3 Thai chili pepper (optional)
- 3 tsp larb seasoning mix
- 1 head of lettuce
If you are unable to find the larb seasoning, here's another option: - 2 TBS toasted sticky rice powder
- ½ tsp -1 tsp dried chili flakes (optional)
- 1 tsp fish sauce
- ⅛ tsp sugar
Instructions
- Chop cooked rotissere chicken breast (no skin)
- Wash cilantro and green onions and chop
- Wash mint leaves, pull apart from stem
- Slice onion shallot into thin slices
- Wash lettuce and cut into 4 wedges
- Cut lime/lemon in half
- Slice Thai chili pepper
- In a large mixing bowl, toss in chopped chicken breast, squeeze lemon/lime over chicken breast, and add laab seasoning mix and lightly toss all together.
- Add in cilantro, onions, shallots and mint leaves into mixing bowl and lightly toss.
- Move larb to a serving platter and place lettuce wedge on the side
