Chicken Lettuce Wraps

Ingredients
Ground chicken:
- 1 lbs. ground chicken
- 2 cloves minced garlic
- 1 TBS minced ginger
- 1 chopped carrot
- 1 can of 8 ounce diced water chestnut
- 1 tsp cooking oil
- ½ green onion, sliced thinly
- sesame seeds to garnish
- 1 whole lettuce head
Sauce for chicken:
- ¼ cup hoisin sauce
- 2 TBS oyster sauce
- ½ tsp soy sauce (if you like it saltier, add 1 tsp)
Dipping Sauce:
- Use the reserved half of the sauce mix
- 1 TBS peanut butter
- ½ tsp hot chili pepper oil (optional)
- 2-3 TBS hot water
Instructions
Sauce:
- Mix all ingredients together in a small bowl.
You will only use half of this sauce mix and save the other half for dipping sauce.
Ground Chicken:
- Add cooking oil into large pan/wok and add in ground chicken.
- Break up the ground chicken.
- When the ground chicken is almost cooked, add in the garlic and ginger and stir.
- Add onion and carrots and stir.
- The chicken and all veggies should be cooked by now. Add in half the sauce for chicken.
- Stir then add in the sesame oil at the end and turn off stove.
- Wash and cut lettuce head into 4 wedges.
- Garnish chicken lettuce wrap with sesame seeds and sliced green onions.
Dipping sauce:
- Use the reserved half of sauce mix and add peanut butter, hot chili oil and water (2 TBS to start) and mix.
- Microwave for 15 seconds and mix. If the sauce is too thick add another TBS of hot water and microwave again for another 15 seconds and mix.
