If you’re looking to make something different with your spaghetti noodles, look no further and try my easy chicken lo mein recipe. I use simple ingredients that are easy to find at any local grocery store. Although it might be simple, it packs a lot of flavor using oyster sauce, coconut aminos, and sesame oil. It’s definitely a crowd pleaser and your friends and family will love it.
My chicken lo mein recipe was created based on using what I had in my pantry and refrigerator so I was down to the bare-bones so that’s the reason why my recipe does not include an assortment of vegetables but feel free to throw in any types of vegetables to your liking.
This is my go to recipe when I want something quick and delicious. I hope my easy chicken lo mein recipe will become a favorite and a weekly rotation for your family. Enjoy!
- Marinate the chicken:
- 8 ounces of chicken
- 1 TBS oyster sauce
- 1 TBS coconut aminos or soy sauce
- 1 tsp sesame oil
- ¼ tsp salt
- 1 tsp cornstarch
- Spaghetti Noodles:
- 6 ounces thin spagetti noodles
- 1 TBS olive oil
- 1 tsp salt
- *Save some pasta water to help loosen the noodles for the stir fry.
- Lo Mein Stir fry:
- 2 TBS olive oil or any cooking oil
- 1 large clove garlic
- 2 green spring onions
- Sauce for Stir fry:
- 2 TBS oyster sauce
- 1 TBS coconut aminos
- Pasta Water
- Cut up the chicken breast or thigh and marinate the meat for 15 minutes with the oyster sauce, coconut aminos (or soy sauce), sesame oil, salt and cornstarch.
- Wash the green spring onions and cut length wise.
- Roughly chop the clove of garlic.
- Boil water and season with salt and olive oil and cook the thin spaghetti noodles.
- Drain and save some pasta water to help loosen the noodles when it's time to stir fry.
- Heat olive oil (or cooking oil) and add the roughly chopped garlic for 30 seconds and then add the marinated chicken.
- Stir and make sure the chicken is cooked through.
- Add the green onions and stir.
- Add in the cooked thin spaghetti noodles and add some pasta water to help loosen the noodles.
- Add in the stir fry sauce of oyster sauce and coconut aminos and mix.
- Taste if you need to add any more seasoning.
Love this as I use spaghetti noodles for my lo mein too! Although I don’t even know what coconut aminos are, lol.
