Korean Green Onion Pancake (Pajeon)

Ingredients
- 1 cup of Assi Vegetable Pancake Mix
- 1 cup cold water
- ⅛ tsp salt
- 2-3 green onions
- 2-3 tbsp vegetable oil
Sauce:
- 3 tbsp soy sauce
- ½ tsp rice wine vinegar
- 1 tsp sesame oil
- sesame seeds to sprinkle
Instructions
- Wash and cut your green onions
- Mix pancake mix, salt, water
- Mix pancake batter and green onions
- Use a sauce pan and heat on medium high with 2-3 tbsp of vegetable oil
- Ladle pancake batter and fry for about 2-3 minutes, flip over the pancake onto the other side and cook for another 2-3 minutes
Sauce:
- Mix soy sauce, rice wine vinegar and sesame oil together
- Sprinkle sesame seeds on top.
Notes
*If you end up with more green onion than batter, mix another 1 cup of vegetable pancake mix and 1 cup of cold water.
